Healthy, Fudgy, Brownies

"I tried the Jessica Seinfeld recipe for brownies and thought they were very dry so I made my own recipe inspired by her idea for a healthy brownie. They are very moist and fudgy in texture. Give them a try! :)"

  • Preheat the oven to 350 degrees Farenheit. Coat a 13x9 inch baking pan with grapeseed oil.
  • Melt the chocolate in a double broiler in the microwave.
  • In a large bowl, combine the melted chocolate, sweet potato puree, sugar, cocoa powder, grapeseed oil, and vanilla, and whisk until smooth and creamy, 1-2 minutes.
  • (I use my Kitchen Aid mixer).
  • Whisk in egg. Stir in flour, flaxseed meal, baking powder, and salt.
  • Pour the batter and spread into the pan and bake 40 to 45 minutes. Cool completely and sprinkle with powdered sugar, cocoa powder, or frost with chocolate frosting if desired.
  • (I love to frost mine).

  1. My kids loved this (I made sure not to tell them about the healthy stuff added). It is a more cake-like brownie. I used olive oil, and frosted it (it needed the frosting, I think). This one is a keeper. Thanks for sharing this sneaky recipe!
     
  2. I used safflower oil and Splenda brown sugar (gave it a bit of a molasses taste) 1 cup flour and 1/2 cup oat bran. That said, it was excellent, if my son eats it it ranks above 5 star. As he is allergic to anything remotely healthy. He grabbed some for breakfast, put some in his lunch box. I froze the rest for later. Not quite sure how the sweet potato and flax seed meal will affect him, don't want to over do a good thing. Thanks for sharing.
     
  3. I used all the ingredients as listed, except I used half oat and half white flour. I accidentally added the flaxseed to the chocolate mixture but it seemed okay. However after I added the flour the mixture became very thick and I had to spread it in the pan with my fingers. I did frost it with canned chocolate frosting, which made it even better. Even though this is high in sugar, I am comforted in knowing there is sweet potato and flaxseed in the mixture. It makes me feel that I'm indulging in a healthy way!
     
  4. At first I thought about giving this a 4 star, but I think it (barely) qualifies as a 5 star. It is certainly a 5 star for ingenuity and creativity. I think that grapeseed oil could be replaced with butter or something else (I used olive) and the flours (I used half ww and half white) could be substituted with other flours, so that is good too. I might try ww and oat next time. That chocolate (I microwaved mine) REALLY gave it the flavor...amazing for just that little bit. The vanilla is 1 Tablespoon, and it seemed like a lot but was right. These were really really good. Would be better frosted, I'm sure. For what they are they are outstanding, but I DO believe there is a better brownie out there. And these are fudgy/cakey...quite a bit more on the cakey side, fyi.
