  • Saute curry powder and onion in olive oil for 3 mintues.
  • Add cauliflower and cook for 8 mintues, or until tender.
  • Add chickpeas and raisens and cook for 3 to 4 minutes, or until warm.
  • Place curry mixture on top of rice and top with scallion.
