- 3 eggs
- 1 1⁄2 cups white sugar
- 1⁄2 cup brown sugar
- 1 cup unsweetened applesauce
- 1 teaspoon vanilla
- 2 cups raw shredded zucchini
- 3 cups flour
- 1 teaspoon baking soda
- 1⁄2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1⁄2 teaspoon nutmeg
- 1⁄2 cup slivered almonds
- 1⁄2 cup grated carrot
directions
- Beat eggs, add sugars. Add remaining ingredients. Blend well. Bake in greased loaf pan for 1 hour at 325 degrees.

This is now the only zucchini bread recipe I will ever use. Super moist, it's almost like eating candy! Freezes well too. I've made this as shown, as well as using 1/2 whole wheat flour and 1/2 unbleached white. I've also added ground flax at times when I've had it, and have used apples along with the zucchini when I had extra to use up. Great recipe! Thank you, thank you, thank you! :)
