Gingered Rhubarb Bread

ingredients
- 2 cups stewed rhubarb
- 2 tablespoons butter
- 2 tablespoons sugar
- 2 eggs
- 2⁄3 teaspoon salt
- 1 1⁄2 teaspoons ginger
- 1 1⁄2 cups whole wheat flour
- 2 1⁄2 cups bread flour
- 2 1⁄2 teaspoons yeast

Stewed rhubarb
- 2 lbs rhubarb, trimmed and cubed
- 1 cup sugar (or more to taste)
- 1⁄2 cup orange juice
directions
- Stewed rhubarb: combine sugar, orange juice and rhubarb in a saucepan over low heat. Simmer until rhubarb falls apart and sauce is thick like a puree. (also try over ice cream!).
- Bake bread according to manufacturer's instructions.
