ingredients
- 1⁄2 cup peanut butter
- 1 cup skim milk
- 1 (1 1/2 ounce) package fat-free sugar-free instant chocolate pudding mix
- 1 cup fat-free cool whip
directions
- Mix first three ingredients together then fold in cool whip
- Pour into lined cupcake tin and freeze.

This makes a nice treat when you are looking for something sweet. I first tried to mix the milk with the peanut butter which was difficult until I added the pudding then everything seemed to come together when I used a fork. I'd also suggest using cool-whip that is not frozen (duh). I tried with the frozen and it was difficult to incorporate. Follow the directions and you'll have yourself 12 little treats you'll wan to eat all by yourself!

OMG! I think I died and went to heaven. These are so good, just like the Reese peanut butter candy. I really thought that they would freeze hard like an ice cube but no they are the same consistency as the candy bar. Also the same size. These just melt in your mouth. Boy, are these bad for me to have around the house. Good thing they are hiding in the freezer. They don't look very pretty as my photo shows but they are really good. I couldn't pour them in the liner I had to spoon them in. Thanks for posting. Made for Fall PAC 2009 :) This is going in my best of 2009 cookbook!

I had a hard time incorporating the pudding into the peanut butter and milk. It didn't seem to mix completely, seemed a little grainy from the pudding. Does anyone have any suggestions. Taste great anyway and would make it again. I think I would prefer Milk Chocolate pudding instead of the dark chocolate.

Great recipe! I had no trouble mixing when combining the pudding with milk first, then adding peanut butter, then Cool Whip. I piped the mix into miniature cupcake liners and it made 23 (yes, I had a little dip in the mix before I piped them!). So cute, two-bite sized and super easy to make. These are about 3 grams useable carbs each, when made with 2% rather than skim milk. Try them :o)
