Easy Mexican Supper Casserole

"This is not too hot and not to bland. You can adjust the amount of heat by the pepper spices you use. I love to fix this for family get togethers."

  • In a large skillet brown ground beef and onions.
  • Drain thoroughly and put back in skillet.
  • Add to beef mixture cumin, chili powder, garlic powder, paprika, salt, black pepper, and tomatoes with green chilis.
  • Let simmer for 5 minutes.
  • In a 13x9 baking dish cover sides and bottoms with 1/2 of tortillas.
  • Place 1/2 of beef mixture over tortillas.
  • Place remaining tortillas over beef mixture.
  • Place remining beef mixture over tortillas.
  • Combine cottage cheese, 1 cup shredded cheese, and egg.
  • Pour over meat mixture.
  • Bake at 350 for 30 minutes.
  • Remove from oven.
  • Layer lettuce, tomatoes, and 1 cup shredded cheese diagonally across casserole.
  • Serve with your choice of garnishes.

  1. We enjoyed this casserole very much. Prepared exactly as written, adding lettuce, tomato, shredded cheese, onion, lite sour cream, and crushed nacho chips as garnish. My son commented that it was similar to taco pizza, with a little twist. For me, the spice was just right but might have been a tad too spicy for my 7 year old. Thank you for the recipe!
