ingredients
- 2 1⁄4 cups flour
- 3 teaspoons baking powder
- 1 1⁄2 teaspoons salt
- 6 eggs
- 3 cups dark brown sugar
- 1 1⁄2 cups walnuts, finely chopped
- 3 cups chopped dates (buy pre chopped for ease)
- 3 teaspoons vanilla extract
- 3⁄4 cup melted butter
- 2 cups confectioners' sugar, for after they come out of the oven
directions
- Sift together first 3 ingredients.
- In a separate large bowl beat eggs & nuts adding brown sugar slowly.
- add rest of ingredients including melted butter (but not confectioners sugar) add flour mixture last.
- pour into well greased & floured 9 x 12 pan.
- bake @ 350 for 35 minute.
- prepare Large flat cotton towel or old tablecloth on flat surface that is spread with confectioners suger slightly larger than your 9 x 12 pan.
- when you take them out of the oven invert the pan on to the confectioners sugar.
- sprinkle more confectioners sugar on top.
- VERY IMPORTANT>>>>while STILL HOT cut with large knife into bite sized cookies
- let cool then store in covered container without stacking layers.
- these are a soft chewey cookie & will become a family favorite, I guarantee.

Made these bar cookies as given in the recipe, & we absolutely loved 'em (actually we still do, since there are still 6 left, but not for long)! I made them with very nice tasting & moist Medjool dates, & I wasn't about to share them with anyone, at least not this time around! I'll be making another batch to have on the finger food counter when I next host one of my monthly meetings, & that's when I'll share these wonderful treats! Thanks so much for posting the recipe!
