ingredients
- 1 1⁄2 lbs ground beef, browned
- 14 1⁄2 ounces diced tomatoes and green chilies
- 10 3⁄4 ounces cream of onion soup
- 1 ounce taco seasoning mix
- 1⁄4 cup water
- 6 corn tortillas, cut into 1/2 in strips
- 1⁄2 cup sour cream
- 1 cup shredded cheddar cheese
- 2 green onions, sliced (optional)
directions
- Combine beed tomatoes, soup, seasoning mix, and water in slow cooker.
- Stir in tortilla chips.
- Cover. Cook on low 7-8 hours.
- Spread sour cream over casserole. Sprinkle with cheese.
- Cover. Let stand 5 minutes until cheese melts.
- Remove cover. Garnish with green onions. Allow to stand for 15 more minutes before serving.

This is delicious! I found this recipe in my "BIG Fix it & Forget it" cookbook and am glad you posted it! I used FF cream of chicken soup instead of onion and skipped the sour cream, so just topped with cheese. It did, however start to blacken on the sides after about 5 hours of cook-time on LOW, so I would just suggest cooking it on LOW for 5-6 hours instead of 7-8. The flavor is amazing and it was great topped with jalapenos and fresh avocado! Thanks for sharing!
