- 1 (8 ounce) package cream cheese
- 1 cup milk
- 1 cup sour cream
- 1 (3 3/4 ounce) package lemon instant pudding pie filling
- 1 graham cracker pie crust
- 1 (10 ounce) package red raspberries, thawed
- 1 tablespoon water
- 1 tablespoon sugar
- 1 tablespoon cornstarch
directions
- Stir or beat cream cheese until soft.
- Gradually add 1/2 cup of the milk until smooth.
- Add and beat in the other 1/2 cup of milk, sour cream and pudding mix until just blended (about a minute).
- Pour into pie crust and refrigerate until set.
- Meanwhile, sieve raspberries through metal strainer until mostly seeds are left.
- Combine in bowl water, cornstarch, and sugar.
- Add to Raspberry puree in saucepan. Bring to boil stirring constantly. Cook until thick. Let cool.
- Spread over pie and chill until serving time.
