ingredients
- 5 cups old fashioned oats
- 1 1⁄2 cups cooked quinoa (about 1/3 cup dry)
- 1⁄2 cup honey
- 1⁄2 cup maple syrup
- 1⁄2 cup applesauce
- 1⁄2 cup coconut oil
- 2 teaspoons vanilla extract
- 1⁄2 teaspoon salt
- 1 cup raisins
- 1 cup chopped almonds (optional) or 1 cup pecans (optional)
directions
- Preheat oven to 350 degrees.
- Blend 1 cup of the oats in a food processor until a fine powder.
- Mix blended oats and rest of ingredients together in a large bowl until thoroughly combined.
- Butter a 13x9" casserole pan or cake pan and press mixture firmly into the pan.
- Bake for 20 minutes or until edges start to turn a light brown.
- Cut into bars when cooled.
- These can be stored at room temp if eaten within a couple days. Otherwise, you can freeze them and get out one at a time or as needed.
