Banana Oatmeal Cookies

"A delicious oatmeal cookie recipe adapted from myrecipes.com. They smell so wonderfully of bananas. Feel free to add chocolate chips or nuts or dried fruit! I actually forgot to add the salt that was in the original recipe and didn't add the chocolate chips either."

  • Preheat oven to 350°.
  • Combine first 5 ingredients in a large bowl; beat with a mixer at medium speed until smooth. Add egg; beat well.
  • lightly spoon flour into dry measuring cups; level with a knife. Combine flour, oats, and baking soda in a medium bowl, stirring with a whisk. Add flour mixture to banana mixture in bowl; beat with a mixer at medium speed until well blended.
  • Drop batter by tablespoonfuls 2 inches apart onto baking sheets. Bake at 350° for 10 minutes or until golden. Cool on pans 2 minutes. Remove cookies from pans; cool completely on wire racks.
