Mini - Cheesecakes

This is a recipe that I got years ago from My Mother-in-law - simple and delicious!

Yields: 12 mini cheesecakes

  1. Line muffin tins with foil.
  2. Place one vanilla wafer in each liner.
  3. Mix cream cheese, vanilla and sugar on medium speed until well blended. Add egg, one at at time, blending well after each addition. Pour over wafers, filling 3/4 full.
  4. Bake at 325F for 25 minutes.
  5. Remove form pan and cool.
  6. Top with fruit preserves, nuts or chocolate.
  7. BE CREATIVE!
