Impossible Pumpkin Pie

"Impossible" because the biscuit mix somehow magically gets its act together and forms a bottom crust.

Ingredients

• 2  eggs
• 1 1⁄2 cups  solid packed can pumpkin
• 3⁄4 cup sugar
• 2  tablespoons butter, melted
• 1⁄2 cup biscuit mix
• 1  cup evaporated milk
• 1  cup water
• 1⁄2 teaspoon salt
• 1  teaspoon cinnamon
• 1⁄4 teaspoon clove
• 1⁄4 teaspoon nutmeg
• 1⁄2 teaspoon ginger

Directions

1. In blender, combine all the ingredients; blend on low for 2 minutes.
2. Grease and flour a 10-inch pie plate. Pour in the filling and bake for 350°F for 45 to 50 minutes.
