Happy Trails Muffins

This gorgeous recipe for moist and flavorful yet also healthy muffins comes from " The Wild Wild West" cookbook, which I got of my wonderful swap partner and friend Tammie in the 2009 Cookbook Swap. Yields: 18 muffins

Ingredients

  • 34 cup  oat bran (use toasted for more flavour)
  • 34 cup flour
  • 12 cup whole wheat flour
  • 2  teaspoons baking powder
  • 12 teaspoon baking soda
  • 1  teaspoon cinnamon (original calls for 1/2ts but I like it better this way)
  • 14 teaspoon nutmeg
  • 14 teaspoon salt
  • 1  large egg
  • 1  cup applesauce
  • 12 cup low-fat plain yogurt
  • 2  tablespoons  oil (mixed with 1 tbsp applesauce)
  • 1  tablespoon applesauce
  • 3  tablespoons honey or 3  tablespoons  agave nectar
  • 1  cup apple, chopped (1 apple)
  • 12 cup pecans, chopped (optional, I leave them out)
  •  cinnamon sugar, for sprinkling (optional)

Directions

  1. Coat muffin pan with non-stick cooking spray or line with paper cups (muffins will stick to them though).
  2. Combine first 8 ingredients in a large bowl.
  3. In a second bowl combine oil mixed with 1 tbs applesauce, 1 cup applesauce, yoghurt, egg and honey/agave nectar. Add to dry ingredients and stir only until just moistened.
  4. Fold in apples and pecans if using. Pour into prepared muffin tins, sprinkle lightly with cinnamon sugar if using.
  5. and bake in the pre-heated oven at 400°F for 20-25 minutes.
