Ginger Peach Julep

I would never have thought myself to be a bourbon lover, but bourbon in a fruity sweet-based drink is surprisingly good.   1. Combine the peach slices, bourbon, ginger syrup and mint leaves in a mixing glass. Muddle gently, crushing the peaches and bruising (but not tearing) the mint leaves. Let the mixture sit for 2 or 3 minutes.
  2. Pack a highball glass, julep cup or Mason jar with crushed ice and insert a straw. Slowly pour the contents of the mixing glass through a strainer into the ice-packed glass. Garnish with a mint sprig.
