Creamy Salad

Ingredients
- 1 large red onion, diced
- 3 cups fresh broccoli florets
- 3 cups cauliflower florets, fresh
- 1⁄2 cup sliced almonds
- 1⁄2 cup carrot, shredded
- 1 cup blue cheese, crumbled
- 3⁄4 cup fat free sour cream
- 1⁄4 cup plain fat-free yogurt
- 1⁄3 cup fresh parsley, snipped
- 1 1⁄2 teaspoons dried coriander
- salt and pepper
Directions
- In a large bowl, mix the first 6 ingredients together.
- In a smaller bowl mix the remaining 5 ingredients together to make dressing.
- Add the dressing to the salad and mix well. keep refrigerated until ready to serve. I would serve same night as prepared.
