Creamy Salad

This is a simple easy to prepare salad that you can take to your office's potluck party. Just make sure the vegetables are washed properly, first. You may find the amount of sour cream a little too much, but I do like my creamy salads to be especially creamy, or else they are not considered creamy enough.

• Serves: 8-10

Ingredients

• 1  large red onion, diced
• 3  cups fresh broccoli florets
• 3  cups cauliflower florets, fresh
• 1⁄2 cup  sliced almonds
• 1⁄2 cup carrot, shredded
• 1  cup blue cheese, crumbled
• 3⁄4 cup fat free sour cream
• 1⁄4 cup plain fat-free yogurt
• 1⁄3 cup fresh parsley, snipped
• 1 1⁄2 teaspoons dried coriander
•  salt and pepper

Directions

1. In a large bowl, mix the first 6 ingredients together.
2. In a smaller bowl mix the remaining 5 ingredients together to make dressing.
3. Add the dressing to the salad and mix well. keep refrigerated until ready to serve. I would serve same night as prepared.
