- 5 cups red potatoes, Diced
- 2 cups water
- 2 tablespoons butter
- 1 1⁄2 teaspoons salt
- 1⁄2 teaspoon pepper
- 1 -2 tablespoon fresh parsley (optional)
directions
- Combine all ingredients in a medium saucepan.
- Cook uncovered, over medium-low heat until potatoes are done and have produced a gravy like sauce.

Who would have ever thought that adding the butter before cooking would result in such delicious potatoes!! These were so good and so easy that we'll be eating these on a regular basis! I covered the pot so water didn't evaporate - and am guessing I should have left them uncovered while they cooked. Guess I'll have to peel a few potatoes tonight to :-) check out that theory. Thanks Deely for a new family favorite!
