Marinade for London Broil

This is a recipe provided by a chef from a company I used to work for. While it requires a 2 day marinade, it is well worth the wait. The sweetness of the pineapple juice along with the saltiness of the soy sauce makes for a fantastic flavor.

This gave the meat a wonderful flavor. The only change I made was to add about 2 cloves of minced garlic and about 2 T of minced shallots to the marinade.

  1. Marinate for two days. Broil until internal temperature reaches 120°F.
  2. This is enough marinade for a 3 lb flank steak.
