I'm a paramedic in NE Arkansas. I love to eat and I love a lot of flavor. My favorite ingredients are green/red bell peppers, onions and garlic. I use them in almost everything. I go through about 5-6 bell peppers and onions every week. When I'm not at work or cooking I can either be found working on computers or, in the right seasons, out chasing severe weather. I do all the cooking around the house, my gf who lives with me has burnt hamburger helper TWICE now so the stove is off limits to her... And I love cooking with cast iron. I use it more than any other pan in my kitchen. The flavor and ease of cooking is not matched. If you see in a recipe I'm doing something in a skillet, you can bet is cast iron. Just remember on cast iron, stay away from high heat. I rarely go past medium unless I'm trying to get a sauce to simmer, then only medium high. It may take a little longer, but your food doesn't dry out or stick. If you have any question about cooking with cast iron, please zmail me. Oh and if you on a diet or worried about your health, my recipes probably aren't for you. One bite of this stuff could probably clog up your arteries, but at least your digestive tract will be well greased :)
