I have celiac disease and food allergies including corn, eggs, dairy, beef, pork, legumes and tree nuts. Fun, right? So yes, I am always looking for something to do with chicken. I cook at least twice a day. Pretty much everything I eat; I rarely eat out. It's not safe and it's hard to find dishes I can eat and a staff who can serve me without my getting sick. The last thing I want to do is come to a restaurant and be a headache (give ME a headache!). I'd rather just cook it at home exactly the way I want it. I'm also exploring other fowl and have probably eaten more lamb and bison than 50 regular American families combined. I feed my husband a lot of duck tacos; I probably slow-cook a duck every two weeks or so just to have it ready to make lettuce or spring rolls or a quick something with. Still remembering that one perfect bison rib-eye I had 3 years ago. Tender and great marbling. Yum! I'm basically paleo and mostly into the autoimmune protocol diet (AIP); I feel a lot better when I stay off complex starches, though I can do a little honey okay. Eating lots of veggies is good for most anyone who can tolerate them, I guess, and my husband and I eat lot of them.
