I learned to cook and bake simply because I love to eat well and without using "Value-added" food products. I've been cooking since 1958 and still have a lot to learn. Recently retired RN, I advocate no special diet; only Good Food, in Good Company. I also enjoy yeast baking and will try almost anything. I have ground my own W.W. flour for >20 years, but have no fear of white flour, when appropriate. I respond to messages and I post recipies only when I know that they work - even for idiots like me. (See Carlton Brothers' Killer Mashed Potatoes - for one example.) Happy cooking to all!!
