- 1 lb spaghetti
- 1⁄2 lb bacon, cut in 1/2 inch slices
- 6 eggs
- 1 cup parmesan cheese
directions
- Cook and drain pasta. While cooking, bring eggs to room temperature by letting them stand for 5 minutes in hot tap water. Also while cooking noodles, brown bacon. ( Do not drain grease.).
- Beat eggs together with a fork. Stir in parmesan cheese.
- Toss hot, cooked pasta with hot, browned bacon. Add beaten eggs and cheese. (The heat from the noodle mixture will cook the eggs. Keep stirring so that they coat the noodles and don't stick to the bottom.).

This is like having breakfast for dinner. I used an entire pound of bacon, and I wasn't sure if I was supposed add the grease back to the noodles so I opted to add a tablespoon or so just for flavor. I did add a little salt and pepper. Very simple and delicious. Made for P-A-R-T-Y 2009. Thank you Mom10 for posting this!
