Stinging Nettle Pesto

"I've been using nettles lately and found this recipe on the internet but not sure where. It looks really good and would be great served over pasta."

  • Steam the nettle.
  • Once that is done remove from the steamer and let sit for a few minutes to drain.
  • Put the steamed nettle into the food processor and add all the other ingredients except the olive oil. Turn on the machine and process then slowly add the olive oil in a small stream into the ingredients until used up.
  • You should have a nice smooth sauce when done.
  • Mix over your favourite hot pasta and add a little more cheese if desired.
  • Enjoy with a glass of chilled wine and garlic bread.
  • Bon Appetit.

  1. I followed this recipe word for word but found I did not have to use as much olive oil as called for. It came out unbelievably delicious. I make basil pesto when it is in season and have made a pesto based on parsley in the past. I never thought to make one from stinging nettle, and what a wonderful way to use this ultra-healthy green in season and to celebrate Springtime. My children and husband give it two thumbs up, as well, and would give it more than that if they had more thumbs! Thank you for sharing this awesome recipe -- Bravo / Brava!

We are trying our best to live a Green and Sustainable lifestyle which is no easy feat in a desert. I love any cookbook that promotes good health and tasty meals. I enjoy pasta dishes and sweet vegan deserts. I have found that I am very successful in converting conventional recipes to vegan. This has allowed me to enjoy all types of foods that I other wise could not. Some day we would like to relocate to upstate New York and be closer to my family in Canada and my husbands in New York. My DH retires in 9 years, so nothing will stop us from heading home then :-)
