- *Tip* to peal the peaches, halve them, remove the pit and drop in boiling water for 2 minutes, ABSOLUTELY no more than 3 minutes! The peel will just slip off.
- Beat the eggs, 1/2 and 1/2, and amaretto
- In a separate bowl, mix the sugar, flour and spices.
- Combine liquid and dry ingredients. Mix well.
- Add the peaches and stir.
- Pour into the pie crust and bake at 450º for 10 minutes.
- Turn oven down to 375º and bake for another 45-55 minutes, or until tests clean.
