Rich's Sweet and Spicy Tuna Salad Sandwiches

"Everyone loves my recipe for tuna salad. It's healthy, delicious, and has loads of flavor."

ingredients

• 2 (12 ounce) cans tuna fish (thoroughly drained)
• 1 carrot (chopped)
• 3 shallots (peeled and chopped)
• 1 lemon, rind of (grated)
• 1⁄2 lemon, juice of
• 1 small jalapeno pepper (seeded and finely chopped)
• 3 stalks celery (chopped)
• 1 roma tomato (chopped)
• 1 pinch fresh coarse ground black pepper
• 1 small green bell pepper (chopped)
• 4 tablespoons canola oil mayonnaise (high oleic if possible)
• 3 tablespoons sweet pickle relish
• 6 large romaine lettuce leaves (cut in half)
• 12 slices whole wheat bread (toasted whole grain)

directions

1. Combine everything in a large bowl except for the lettuce and bread. Put lettuce and tuna salad on toasted bread, and enjoy.
