Mom's Hamburger Chicken Noodle Casserole

"This is a recipe that my mom made frequently when we were growing up. This is "comfort food" at it's best and is also economical and fast to fix. The amounts can be increased to feed a crowd or decreased to serve your family. I like to make it as written so that I have leftovers the next day."

  • Preheat oven to 350 degrees.
  • Spray 5 quart, oven proof dutch oven with non-stick spray.
  • Crumble ground beef into dutch oven, add chopped onion and salt and pepper.
  • Brown ground beef and drain grease well.
  • Return ground beef to dutch oven.
  • Stir in soup, water and rice.
  • Cover and bake for 30 minutes.
  • May need to remove lid at end of baking time and bake for an additional 10 minutes to absorb liquid.
  • If doubling this recipe to serve a crowd, brown the beef and onion and seasoning, and place in large roaster sprayed with non-stick cooking spray.
  • Recipe as posted serves 8.

I live in southeastern South Dakota, near the Missouri River. I am managing editor of the weekly newspaper in a small town ten miles from where I live. I also keep busy with my 13 year old son's activities. It's been a challenge to learn to cook in smaller quantities since both of my daughters are grown and on their own. I enjoying cooking, baking, collecting cookbooks, trying new recipes, reading, hunting, fishing and bowling. My favorite cookbooks are church cookbooks. I have a church cookbook that I received from an aunt as a shower gift 25 years ago that has become "well-worn" and is my "go-to" cookbook along with a couple of other cookbooks that I frequently use. The rest of my cookbooks also get used but not as often as my favorites. My kids laugh at me as I read cookbooks like others read novels and always have sticky notes handy to mark pages with recipes that I want to try.
