Matagorda Fire

"This is a great recipe that will feed a horde. I got the recipe from a friend who taught at a high school I used to work at. He is also a published author -- Ron Rozelle. This recipe works well in a crockpot. Serve in the crockpot with baskets full of corn chips."

  1. Linda, I think this recipe was first copied and left out for takers in the D wing workroom, by JB. She worked in E wing. If I am guessing the name right, you worked in the office. I made this recipe a few times and it is similar to a dish also called “Mexican Sweat”. The main thing I noticed was that this was much spicier. I ate pretty spicy back then too. It all depends on the heat of the chili peppers I think. I can’t find my copy and did a google search to see if it was out there and saw Ron’s name so I knew I was probably onto the one I knew!

  1. I made this for a recent family get together. It turned out pretty good, but I would probably double the cheese next time to make it a cheesier dip. Would also maybe add some cumin for extra flavor.
