- 1 (1 1/2 lb) bag baby red steamer potatoes (available in produce section)
- 3 tablespoons butter or 3 tablespoons olive oil
- 1⁄2 teaspoon garlic salt
- 1⁄4 teaspoon black pepper
- 1⁄2 teaspoon onion powder
- 1⁄2 - 1 cup of shredded colby-monterey jack cheese or 1/2-1 cup cheddar cheese
- sour cream, as desired for topping
- 1 -2 tablespoon dried parsley or 1 -2 tablespoon chives
- fried crumbled real bacon or imitation bacon bits, for topping

- Microwave the steamer potatoes for 8-9 minutes or per package directions. Let stand one minute after cooking per instructions.
- In medium sized bowl microwave safe bowl , combine the butter, garlic salt, black pepper, onion powder, and parsley or chives. Microwave for 45 seconds to 1 minute or until melted. Stir combination thoroughly. If using olive oil, only heat to warm it up or it may have a funny taste.
- After the potatoes have rested the required 1 minute, empty the contents of the bag into the bowl and cut the potatoes into halves or quarters as desired. Thoroughly mix the potatoes taking care to cover them all with the butter mixture.
- Add the colby jack or cheddar cheese to the top and lightly toss; place bowl back in microwave for approximately 20-30 seconds to melt the cheese. Carefully remove the bowl from the microwave as it will be hot. Gently blend the cheese in and top with sour cream and bacon bits and enjoy!
- I have tried this recipe with both the butter and the olive oil and they both are very good, but the butter gives it more of a real "loaded baked potato" flavor.
