Ready In:

  • Mix all the veggies, olives and parsley into a large bowl. Crumble or slice the feta cheese over the salad. Combine the oil, vinegar and oregano - either shake it together in a jar or whisk. Pour the dressing over the salad - don't pour it all in at once, instead pour the amount to taste. Season your salad with salt and pepper and let it marinate until you're ready to serve.
  • Meanwhile, you can quickly grill your pita bread (or use a hot griddle or grill pan). Grill until the pita gets blistered and warm on both sides.
  • Serve the grilled pita alongside the salad and enjoy!

  1. Great salad! Made as written, except for the green bell pepper. I love that you can use what you have, and this salad is even better the next day! Thanks for sharing!
  2. This is a great salad that you can adjust to the ingredients you happen to have. Seedless cucumbers were outrageously expensive, after being cheap the last few weeks, so I bought some pickling cucumbers and those worked very well. Also, I added from fresh Greek oregano - leaves and blossoms - since it's growing strongly in my garden this summer. Also had no pita, but a warmed chunk of baguette worked well. A terrific cool dish for a hot day.
  3. Oh yeah, this satisfied my craving for a crisp authentic Greek Salad! It all tasted so fresh and delightfully tasty. The grilled pitas went perfectly with this crispness of the salad. Added the addition of lettuce because we normally like it that way. I think I will use the grilled pita addition from now on, as it was the icing on the cake. Thank you, LIG, for sharing! Made it for FYC.

  4. Both DH and I love Greek Salads but strangely have never tried making it at home; this is an excellent one with all the Greek flavors we've enjoyed in our favorite Greek Restaurants. Now we can have it anytime we like. I used a lovely Greek Feta with herbs added for that extra punch. Didn't have any pita at home so had to skip that part; but next time I'll be better prepared. This made for a lovely light dinner served with a chilled white wine after a long hot Spring day working in the garden
  5. I could live on this salad. It's that good. I reduced it to one serving since I was dining alone tonight. It made a very generously sized single salad. The grilled pita is a nice addition. Made for ZWT9

Hello! I have a wonderful husband and two fantastic kids. I love to read, have fun with family and friends, stay active with: running; soccer; golf; biking; hiking; and gardening. I love to travel. I'm looking forward to more international travel someday. Cooking has become a passion for me. I love to read cookbooks, watch the Food Network, and try new recipes. I have way too many cookbooks! A few of my favorites are: Barefoot Contessa (any - but especially 'Family Style'),Rachael Ray 30-Minute Meals 2, Roasting by Barbara Kafka, Beyond Parsley & The Black Dog Summer on the Vineyard Cookbook. I try to carefully choose recipes that I think my family will enjoy, which is why most of my ratings are 3-5 stars. Happy cooking!
