Fish with Green Chilies

"This is a mildly spicy recipe, which can be made hotter with the addition of fresh chilies if you like. It pairs well with spanish rice and green beans or fresh corn off the cob. Make this meal in 30 minutes or less!"

  • Cut fish into 4 serving pieces.
  • Place onion and garlic in oil in skillet and saute for just a minute or two.
  • Place fish on onion; sprinkle with salt and pepper.
  • Spoon tomatoes and chiles over fish; top with olives.
  • Pour wine over fish.
  • Heat to boiling; reduce heat.
  • Cover and simmer until fish flakes easily with fork, about 10 minutes,depending on the thickness of the filets.

  1. This is delicious and an easy dish to serve to guests (our guest raved about it!) I did add a chopped, fresh green chile to jazz it up a bit, and served with steamed rice and corn on the cob. Great meal, thanks Geema!

  3. Just loved this recipe so simple. I actually put it in foil and made a package and cooked it in my new beaut portable turbo oven. This way was a no oil option, and no skillet to wash. I did add a fresh green chilli.
     
  4. This recipe looked nice but even after simmering it for a while with ALL the ingredients the fish just tasted like fish and I felt like all the ingredients were wasted!! Should I have used a pot instead of a skilett or maybe i did something wrong.
     
  5. Thank you we enjoyed this very much. I did't use wine, I added a can of water with a can of chopped tomato. Served it over a thin pasta, made with E.V.olive oil and garlic. It was wonderful!

<p>Life often interupts our comfortable routines in very unexpected ways and in the past three years I've certainly faced some challenges.&nbsp; As a health nut who ate mostly vegetarian I was beyond shocked to discover that I was diabetic.&nbsp;<img title=Yell src=../tiny_mce/plugins/emotions/img/smiley-yell.gif border=0 alt=Yell /> I shouted and rebelled and cried.&nbsp; But the good news is that I can control my glucose levels simply by eating very low carb.&nbsp; What a complete turn around it was to&nbsp;pass up&nbsp;all my high carb vegetarian foods like grains, and veggies and embrace meat!&nbsp;<img title=Surprised src=../tiny_mce/plugins/emotions/img/smiley-surprised.gif border=0 alt=Surprised /> I've adjusted to this limited diet and thanks to Zaar can eat a nice variety of healthful meals.</p> <p>&nbsp;The next challenge was a freakish fall I took while in New York with my daughter that left me paralyzed and in much pain.
