- 1 (10 1/2 ounce) can condensed vegetable beef soup, undiluted
- 1 egg
- 1⁄4 cup breadcrumbs
- 2 lbs ground beef
directions
- Preheat oven to 350 degrees Fahrenheit.
- Drain the sauce from the vegetables/pasta of the vegetable-beef soup and reserve.
- In a large bowl, stir together the egg, vegetables/pasta from the soup, and breadcrumbs.
- Add the ground beef and mix until well blended.
- Shape meat mixture into a rounded loaf shape and place in a baking dish.
- Pour reserved sauce from the soup over the loaf.
- Bake, uncovered, at 350 degrees Fahrenheit for 1 hour.

My 10 year old absolutely loved this meatloaf! You have worked wonders! :D I did use an extra egg, and I processed 2 slices of multigrain bread for the breadcrumbs. Apart from that, I made as directed, and it was a definate kid pleaser. And it was easy and economical! Thanks for sharing! [Made for PRMR]

We enjoyed the flavor of this meatloaf and that it was a versatile recipe. I used ground round, Panko, and since DH likes a lot of sauce a small jar of mushroom beef gravy for the top. Next time I think I would add some finely chopped onion and garlic along with the vegetables from the soup. Made and reviewed for the Australian/NewZealand Forums Recipe Swap #73.

I have multiple food allergies and sensitivities. I halved the ground beef & used 93% lean. I exchanged the soup for 4oz of reduced sodium beef broth, added a hamburger bun and egg. I pulverized the bun in the egg & broth. I’m not allowed onion, but wanted some crunch. So I chopped up some celery, next time I think I’ll dice instead of chop. I added a 1/4 teaspoon salt. There was quite a bit of liquid in the pan after cooking. No pepper as it too is a no no. I was pleasantly surprised at the flavor and texture. My husband enjoyed the meatloaf also. I definitely will make again. I will try as meatballs too.
