ingredients

  • 1 (16 ounce) package frozen broccoli
  • 1 (6 ounce) can condensed cream of celery soup
  • 1 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 2 eggs, lightly beaten
  • 12 cup cheese crackers
  • 1 -2 tablespoon instant minced onion or 1 -2 tablespoon onion powder
  • 1 tablespoon butter or 1 tablespoon margarine

directions

  • Preheat oven 350 deg.
  • Prepare broccoli by package and drain.
  • Combine soup, mayonaise, eggs, cheese, onions, and stir in broccoli.
  • Pour into 1-1/2 quart greased baking dish.
  • Melt butter.
  • Crush crackers and mix with butter.
  • Sprinkle over top of broccoli mixture.
  • Bake for 45-55 minute.

  1. Very good and easy. I used 1/2 cup of choppe fresh onion instead of onion flakes/powder. It's a wonderful, cheesey, broccoli side dish that almost anyone is sure to enjoy. Thanx for sharing.
     
  2. I don't normally go for or write reviews where changes were made but here I go. I decided to make this to use up a can of cream of celery soup. Used fresh broccoli lightly steamed tender-crisp (so as not to get mushy after heating the casserole in the oven) rather than frozen. I also cut up and sauteed some chicken breast and added it to make it more of a complete meal. Used plain Ritz crackers instead of cheese crackers. After tasting this, I think cheese crackers would probably be a bit much (at least for me). This was a very quick and easy meal. I was expecting something more soupy that I might have to serve over rice. But, it was thick enough to serve by itself so we could skip the rice and watch our carbs. My cooking time was 35-45 mins., not the stated 45-55 mins. Like others have stated, could use some seasoning but that is where you can make it your own. I could also see switching cheeses, different crackers for topping, maybe adding ham, different vegetables. Great base recipe to take any direction you want.

I substituted rice cheddar, and it was still quite good (rice cheddar can make things bland), and I added mushrooms. I used shallots instead of onions (not healthier but migraine-prevention-friendly)... Yummy.

I substituted rice cheddar, and it was still quite good (rice cheddar can make things bland), and I added mushrooms. I used shallots instead of onions (not healthier but migraine-prevention-friendly)... Yummy.
