Banana Coconut Loaf

  • Break eggs in mixing bowl.
  • Beat until light and frothy.
  • Add sugar and melted butter.
  • Beat well.
  • Stir in mashed banana and flavouring.
  • In another bowl, measure in remaining ingredients.
  • Stir until well mixed.
  • Pour over batter.
  • Stir just to combine.
  • Spoon into greased loaf pan 9 by 5 by 3 inch.
  • Bake for 1 hour in 350 degree oven until toothpick comes out clean.
  • Let stand for 10 minutes.
  • Remove from pan.
  • Cool.
  • Wrap.

  1. Had a bunch of overripe bananas to use up, soI made a double batch and added 1/2 tsp of Vietnamese cinnamon to all. DH doesn't like walnuts, so I added them to "my" loaf. This was just delicious! Very moist and FULL of FLAVOR! What a simple, great recipe! Thanks for sharing, Boys 5.
     
  2. My husband asked me if I could bake something delicious and tasty for his birthday cakes at work and It was absolutly demolished with requests for more!! Definately a winner in my books:) I did have to extend the cooking time by 10 minutes, as I was baking it at 180 degrees centigrade. Many thanks for the super, tasty, easy recipy!!!

I am a busy single mom of 5 growing boys!! My children's ages are 21,18,14,12 and 10 1/2. In my spare time,when I have any, I try to walk 3 miles a day.I like to read Woman's World and inspirational books and if I didn't have 5 beautiful boys to care for, I would probably be doing missionary work. I live in the beautiful Okanagan Valley in British Columbia and I swear we must be living in Heaven on earth!!!I would love to travel if I had the resources and time with Brazil and South America being on the top of my list of places to see.
