Yummy 4 Cheese Spinach Dip

Ingredients
- 8 ounces cream cheese, brought to room temperature
- 1⁄2 cup chopped red bell pepper
- 1⁄2 cup chopped red onion (can be green onion for a milder taste)
- 1⁄2 package thawed and drained frozen chopped spinach (more if you like spinach, less if you don't)
- 1⁄4 cup parmesan cheese
- 2⁄3 cup cheddar cheese
- 1⁄3 cup of choice cheese (can be mozza, jack, or I use feta)
- 1 teaspoon cayenne (or seasoning salt for a milder alternative)
Directions
- In a large mixing bowl mix all the ingredients together really well (leaving 1/3 cup of cheddar for the top).
- Put in greased over ready dish (glass, china, anything but a pan or tin).
- Top with remaining cheddar.
- Bake for 15 minute at 375º.
- Make sure it's bubbling! Remove and let rest for 5 minutes.
- Serve with pita wedges, naan or tortilla chips!
