Yogurt Cheese

Ingredients
- 1 quart plain low-fat yogurt
- 1 garlic clove, finely minced
- 2 tablespoons minced parsley
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon dried tarragon
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- crackers or vegetables
Directions
- Rinse a one foot length of cheesecloth in cold water and wring out. Place yogurt in center, wrap cloth around it and set in strainer or colander in a bowl.
- Refrigerate until thick, 8-14 hours. Discard drained liquid and unwrap.
- Mix yogurt and remaining ingredients; refrigerate several hours for flavors to blend.
