Yoghurt With Mint, Onion and Hot Chili (Pudine Ka Rayta)

Ingredients
- 3 tablespoons finely cut of fresh mint
- 3 tablespoons finely chopped onions
- 1⁄2 teaspoon finely chopped fresh hot red chili pepper (or green)
- 1⁄2 teaspoon salt
- 1⁄8 teaspoon ground cayenne pepper
- 1 cup plain yogurt
Directions
- In a small serving bowl, combine the mint, onions, chili, salt and red pepper. When they are thoroughly blended, sir in the yoghurt.
- Taste for seasoning, cover tightly, and refrigerate for at least 1 hour, or until completely chilled.
- Before serving, decorate the rayta, if you like, with fresh whole mint leaves.
