Whole Grain Gingerbread Cake

Ingredients
- 1 cup whole wheat flour
- 1 cup unbleached flour
- 1 teaspoon baking soda
- 3⁄4 teaspoon salt
- 1 1⁄2 teaspoons cinnamon
- 1 teaspoon ginger
- 1⁄4 teaspoon clove
- 1⁄4 cup sugar
- 1⁄2 cup wheat germ
- 1 cup buttermilk or 1 cup yogurt
- 3⁄4 cup molasses
- 1⁄4 cup unsweetened applesauce
- 1 tablespoon oil, plus
- 1 teaspoon oil
- 2 eggs
Directions
- Stir dry ingredients (flour through wheat germ) together in mixing bowl.
- Add remaining ingredients and beat until smooth.
- Pour into greased 9x9 cake pan; bake at 350 for 45-50 minutes, or until tests done.
