  1. In a skillet heat oil over medium high heat,.
  2. Cook cabbage, garlic, onion, carrot and jalapeno pepper, if using, for 10 minutes or until softened, stirring occasionally.
  3. Push vegetables to side of pan; add chicken and cook for 3 minutes.
  4. Stir in stock, beans, cumin, chili powder, oregano and salt.
  5. Cook for 15 to 20 minutes or until chicken is no longer pink inside.
  6. Serve with any of the optional toppings over cooked rice, if desired.
