Wheat Free Vegan Sausages

Yields: 8 sausages
Ingredients
- 500 g black-eyed peas, mashed
- 3⁄4 cup rolled oats
- 1 1⁄4 cups quinoa flour
- 1 tablespoon soy sauce
- 1⁄2 tablespoon olive oil
- 1 1⁄2 tablespoons dried rosemary
- 1 1⁄2 tablespoons dried thyme
- 1⁄4 teaspoon salt
Directions
- Mix together all ingredients until well combined.
- Roll mixture into 8 even sausage shapes and roll in foil, twisting the ends to seal.
- Place in a steamer, or equivalent, and steam on medium-high for 30-35 mins and then either bake, fry, barbecue etc.
