Vidalia Onion Salad

Ingredients
- 1 cucumber, peeled & sliced thin
- 1 onion, sliced paper thin
- 1 medium tomatoes, chopped
- 1⁄4 cup chopped fresh parsley
- salt
- pepper
- 2 tablespoons olive oil
- 1 tablespoon vinegar
- 1 cup plain yogurt
Directions
- Combine vegetables in a serving dish.
- Mix olive oil and vinegar and pour over vegetables.
- Mix well.
- Add yogurt and mix well.
