Ingredients
- 6 egg whites
- 3 cups cooked brown rice (i used boil in the bag, 10 minutes)
- 5 green onions, chopped
- 1 teaspoon cayenne powder
- 2 cups broccoli
- 1 carrot
- 1⁄2 of a celery
- 8 ounces fat free cream cheese, chopped
- 1⁄2 avocado, chopped
- 1⁄4 cup low sodium soy sauce
- 2 tablespoons olive oil
- low sodium soy sauce
Directions
- cook rice as directed on package and put to the side.
- cut carrots into thin stips.
- chop celery into small pieces.
- steam broccoli, carrots, and celery.
- in a hot pan, heat oil, add green onions and cook for about 5 minutes.
- add egg whites and 1/2 teaspoon of cayenne, mix around until eggs are cooked.
- add rice and soy sauce and stir for about 5 minutes.
- add steams veggies, avocado pieces, chopped cream cheese, and 1/2" teaspoon of cayenne mix over heat until melted.
- taste and add soy sauce until flavor desire is met.
