Veggie Quiche

I had this recipe in my file and am not sure where it originated from. It is a great quiche which does not have a crust. This will help to cut calories if you are dieting.. Show more

  1. Preheat oven to 350 degrees. In large skillet, saute peppers, onions and mushrooms til translucent. Remove from heat and set aside. In large bowl mix eggs and cream together. Stir in shredded cheese, sauteed veggies, broccoli and spinach. Stir in vinegar with seasonings. Divide into two glass pie pans. Bake in oven 55-60 minutes.
