Veggie Casserole

Ingredients
- 10 ounces frozen broccoli
- 10 ounces frozen cauliflower
- 4 ounces sliced mushrooms, drained
- 8 ounces sliced water chestnuts, drained
- 1⁄4 cup diced onion
- 1⁄4 cup Minute Rice
- 1⁄4 cup skim milk (any)
- 1 (10 3/4ounce) can cream of broccoli soup (you can use reduced fat)
- 1 teaspoon butter
- 8 ounces Velveeta cheese, cut up (you can use 2% Velveeta or use swiss cheese)
Directions
- Rinse frozen vegetables under cold water and drain.
- Mix all ingredients together and place in a casserole dish.
- Bake at 375 degrees uncovered for 45 minutes. Stir occasionally.
