Vegetarian Chinese Garlic Mushrooms

Ingredients
- 8 large mushrooms
- 3 spring onions, sliced
- 1 garlic clove, crushed
- 2 tablespoons oyster sauce
- 285 g tofu, diced
- 200 g can sweetcorn, drained
- 2 teaspoons sesame oil
Directions
- Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit).
- Chop the mushroom stalks into small pieces and add to a medium size bowl.
- Add the onions, garlic and oyster sauce.
- Add the tofu and sweetcorn and mix well.
- Spoon into the mushrooms.
- Using the sesame oil, brush the edges of the mushrooms and add the mushrooms to a baking dish.
- Bake for 12-15 min, or until tofu is cooked and tender.
- Serve.
