Vegetarian chili

Ingredients
- 2 1⁄2 cups kidney beans, drained
- 1 cup raw bulgur
- 1 cup tomato juice
- 4 cloves garlic, crushed
- 1 1⁄2 cups chopped onions
- 1 cup celery, chopped
- 1 cup carrot, chopped
- 1 cup green pepper, chopped
- 2 cups chopped tomatoes
- 1⁄2 lemon, juice of
- 1 teaspoon ground cumin
- 1 teaspoon basil
- 1 teaspoon salt
- 1 teaspoon pepper
- 3 tablespoons tomato paste
- 3 tablespoons red wine
- cayenne pepper
- spray Pam cooking spray
Directions
- Heat tomato juice to boil, add bulgur, cover, let stand 15 minutes.
- Spray large pan with Pam, sauté onions and garlic, add carrots, celery, spices peppers, cook until tender.
- Add beans and remaining ingredients, and heat gently at least 45 minutes, longer if you like.
- Can be served topped with parsley, cheese, onions, sour cream.
