Veal Scaloppine

Ingredients
- 2 lbs thinly sliced and pounded veal
- 4 sliced fresh tomatoes
- 3 tablespoons olive oil
- 1⁄2 lb fresh mushrooms
- 2 garlic cloves
- 1⁄2 cup white wine
- fresh parsley
- seasoning
Directions
- In large frying pan brown veal quickly with garlic.
- Remove garlic, discard.
- Remove veal.
- Brown mushrooms several minutes.
- Replace veal, add remaining ingredients and simmer covered until tender, between 5-10 minutes.
