Vanilla-Apple Yogurt Cups

Ingredients
- 16 ounces plain low-fat yogurt or 16 ounces soy yogurt
- 3 tart apples, grated
- 2 -3 tablespoons honey or 2 -3 tablespoons agave nectar
- 2 tablespoons lemon juice
- 1 teaspoon vanilla extract
- 1⁄2 cup chopped dried apricot
- 1⁄2 cup chopped pecans
- 1⁄2 cup raisins
Directions
- Combine first 5 ingredients in bowl.
- Spoon into glasses, and sprinkle with apricots, pecans, and raisins.
