Turkey Stroganoff

Ingredients
- 4 tablespoons unsalted butter
- 1 cup chopped onion
- 2 cups chopped mushrooms
- 1⁄2 teaspoon poultry seasoning
- 2 cups light sour cream
- 1 1⁄2 lbs cooked turkey (cut into small bite-sized pieces)
- 12 ounces whole wheat egg noodles
Directions
- At same time as cooking stroganoff, cook noodles pot with water per directions on bag. Heat a large pan on medium heat. Add 1 tablespoon of butter. Once melted, add onion and cook, stirring occasionally, until transparent. Melt remaining butter and cook mushrooms, stirring occasionally, until brown. Add poultry seasoning.
- Add gravy to mushrooms and continue to cook for about a minute. Reduce heath to low and add sour cream. Mix thoroughly. Stir in cooked turkey.
- Serve over noodles.
