Turkey Breast With Cilantro Yogurt Sauce

Ingredients
- 2 1⁄2 lbs boneless turkey breast
- 1 onion, chopped
- 3 sprigs fresh cilantro
- 3⁄4 cup low sodium chicken broth
- 1⁄2 teaspoon kosher salt
- 1⁄2 teaspoon fresh ground black pepper
- 2 tablespoons cornstarch
- 1⁄3 cup low-fat plain yogurt
- 1⁄4 cup fresh cilantro, chopped
- 6 cups mixed salad greens (optional)
Directions
- Spray bowl of crockpot with cooking spray.
- Place turkey breast in bottom of crockpot, top with onions, add cilantro sprigs and pour in broth; season with 1/4 teaspoon salt and 1/4 teaspoon pepper, cover.
- Cook on HIGH for 3 hours or LOW for 5 hours.
- Remover turkey to a cutting board; tent with foil to keep warm.
- Strain liquid into a saucepan; discard solids.
- In a small jar, with a tight fitting cover, add cornstarch and 3 tablespoons of the liquid in the saucepan; shake to combine.
- Bring liquid in saucepan to a boil, over medium high heat; whisk in cornstarch mixture, continue cooking one minute (should thicken).
- Pour sauce into a serving bowl and stir in remaining 1/4 teaspoon salt and 1/4 teaspoon pepper, yogurt and chopped cilantro.
- Slice turkey and serve with sauce and side salad, if desired.
