Tuna and White Bean Salad

Ingredients
- 1 (19 ounce) can cannellini beans (white kidney beans)
- 1 (7 1/2ounce) can tuna, water packed, drained
- 2 cups tomatoes, diced
- 1⁄2 cup red onion, minced
- 2 tablespoons basil, fresh, chopped (or mint leaves)
- 1 tablespoon olive oil
- 2 teaspoons red wine vinegar
- 2 teaspoons lemon juice
- 1 teaspoon sugar
- 1 garlic, minced
- 1⁄2 teaspoon Dijon mustard
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon black pepper
Directions
- In a large bowl, combine beans, tuna, tomatoes, red onions and basil. Stir gently to avoid smashing the beans.
- In a small bowl, whisk together olive oil, vinegar, lemon juice, sugar, garlic, mustard, salt and pepper. Pour dressing over salad and mix well.
